So in addition to my breakfast smoothie, I have started to prepare overnight oats for breakfast. It is quick, easy and healthy. Basically, you prepare ingredients the evening before and put everything in the fridge overnight. In the morning, by adding some fruit and nuts, healthy breakfast is ready. Here is the recipe:
1/2 cup dry oats
2 tbs seed mix (raw pumpkin, sesame and sunflower seeds)
1 tbs hemp or chia seeds
1 tbs flax seeds (ground)
1 cup milk (dairy free milk is what I use)
fresh fruit (bananas, berries, mango, apple) cut in slices or cubes
a handful of nuts (almonds, wholenuts, hazelnuts)
maple syrup or honey for drizzle (and to sweeten some more)
In the evening, put all the seeds and oats in a glass jar.
Pour milk so it covers the goodies. Put the jar into the fridge for the night.
In the morning, slice some fruit on the top and add some nuts. Drizzle with maple syrup or honey. Enjoy!
