Turmeric coconut soup

Here is a quick and yummy recipe for a veggie soup with one of my favorite ingredients – coconut milk. Pretty quick and easy to make.

Ingredients:
coconut or olive oil for the pan
1 yellow onion diced
3 cloves garlic diced
thumb size ginger peeled and diced
salt
1 large or 2 medium size carrots diced
1 sweet potato cubed
1 cup corn (frozen is ok)
pinch of turmeric
pinch of curry powder
3 cups vegetable broth (or one cube of bouillon)
1 cup water
1 can of coconut milk
squeeze of lime or lemon, cilantro for garnish (optional)

Heat some coconut oil (or olive oil) in a pan and add onion, garlic and ginger, turmeric and curry and salt. Simmer until onion is golden-yellow. Add carrots, sweet potato, corn, broth and water and boil for 15-20 minutes until carrots and potato are cooked. Add coconut milk and boil for 5 minutes more. Squeeze some lime, add some cilantro and serve!
