Colorful Asian salad

Here is a quick favorite for us, cabbage lovers. Cabbage, especially raw, is one of the super foods, with its high content of antioxidants, especially vitamin C, fiber and vitamin K. This salad goes well with grilled chicken or steak. Enjoy!

Ingredients: (serves 4)
1/4 of green cabbage shredded (on a mandoline or in a food processor)
1/4 of purple cabbage shredded
2 spring onions diced
a handful of mint chopped
a handful of coriander chopped
a handful of roasted peanuts semi-crushed

1/2 lime (or lemon) juice
2 tbs rice vinegar
1 garlic clove crushed
2 tbs of sesame oil
a pinch of salt
thumb size ginger grated


Mix the ingredients, add dressing and top with peanuts. Indulge!
