Coconut rice with ground pork

It has been one of those rainy, grey weekends. I made leak, zucchini and broccoli soup to warm us up. Then, for Sunday dinner, I made this really simple, rich and yummy dish that is one of our family’s favorites. Even our pickier six-year-old, likes it (although he still picks out the peppers). Here we go:

1 can coconut milk
1 cup water
a pinch of salt
1 1/4 cup rice (brown rice, which is what I used, requires a bit more cooking)
1 red pepper cut in matchstick
1 pound (400gr) ground pork (or beef)
3 cloves of garlic diced
2 tbs soy sauce
2 tbs fish sauce
1 tsp brown sugar
basil and lime


In a saucepan combine rice, water, salt and coconut milk. Once it starts to boil, reduce heat and simmer for 35 minutes (brown rice). Switch off and let stand for 10 min so that all liquid is absorbed. Fluff with fork.

Heat some neutral oil in a wok. Mix soy sauce, fish sauce and sugar in a small bowl and set aside. Add garlic and pepper to the wok and quickly stir fry.

Add ground meat and break into smaller pieces to coat well. Add the suace and mix, strring until it all gets cooked evenly (prok or beef get that draker cooked color). Add some basil leaves and remove from heat. Serve with over coconut rice. Enjoy!

(Note: for those looking for more heat, add also one chili pepper to the garlic, pepper mix, sliced in thin sticks).
