Here is another one of our easy and yummy family favorites. This is a mild, kid-friendly version of the dish which we cook regularly. Here we go:
Ingredients: (serves 4)
1 1/2 cups rice
1 red onion
2 small bell peppers (I used 1 red and 1/2 of a green one this time)
3 + 2 garlic cloves diced
thumb size piece of ginger peeled and diced
2 chicken breasts cut in small cubes
1 tbs of curry powder
1 tbs of turmeric
1 8 oz can of coconut milk
1 8 oz can of diced or whole peeled tomatoes
Combine rice with 3 1/2 cups of water, bring to boil for few minutes, reduce heat and simmer for about 15 minutes and let stand covered for 20 minutes, fluff with a fork. In a shallow pan, heat some olive oil, add garlic and ginger and stir for few minutes, making sure it doesn’t brown. Add chicken and some salt, mix well. Stir regularly so that everything gets well combined and the chicken starts getting a bit brown, about 15 minutes on a medium heat.
While chicken cooks, heat some olive oil in a deeper dish and saute red onion, two garlic cloves and peppers.
Add the chicken, tomatoes and spices. Mix well. Add coconut milk and some more salt to your taste. Reduce heat to low and let simmer for 20 min, until chicken softens abit more and all flavors combine. Once all is done, pour over rice and enjoy!
