Pesto Meatloaf

We love meatloaf. Kids love meatloaf. They are yummy and quick dinner and the leftovers are great for next day school lunches. Our older son made this one last night and it was delicious. It is very simple, only six ingredients, so it is a keeper. Here we go:
Ingredients:
1 pound (375 gr) ground beef
1 pound (375 gr) ground pork
1/2 cup pesto (125 gr) – we used store-bought one, but I am sure that home-made would be even better
1 cup bread crumbs
1/3 cup sun-dried tomatoes, cut into thin strips
1 egg
salt and pepper

Preparation:
Heat the oven to 350F (180C). Mix all ingredients in a large bowl – use hands to mix well. Line a baking dish with parchment paper (for easy clean) and form a meatloaf shape using hands. Bake for about 45-50 minutes, let rest for 10 minutes. Enjoy!
