What to do with leftover grilled chicken? Make a quick and easy mac and cheese that my kids wolfed down. It took altogether less than 30 minutes to prepare this yummy dinner, once you make sure you got all the ingredients. Here we go:
1/2 package elbow (or other) short pasta
2 cups chopped broccoli florets
3 slices of bacon
1 1/2 cup grilled chicken cut into cubes (or you could use fresh chicken)
2 minced garlic cloves
a pinch of turmeric
1 1/4 cup milk
1 cup chicken broth
1/4 cup flour
1 cup shredded cheddar (or other sharp cheese; you could combine two kinds for enhanced flavor)
Cook pasta according to directions. Add broccoli for the last 2 minutes of boiling. Drain and set aside. Saute bacon in an oven-proof skillet with a bit of olive oil. Once brown (but not burnt) scoop with slotted spoon and set aside. Add chicken and garlic to the bacon drippings and sprinkle with turmeric and salt. Cook for few minutes until it is all well mixed.
In a bowl, whisk together milk, broth, flour and salt. Add the mixture to the skillet with chicken and stir until it starts to thicken. Add 1/2 of the cheese and stir some more. Stir in pasta mixture. Add the leftover cheese and bacon to the top. Broil for 5-6 minutes or until the cheese starts to melt and there is a bit of crust forming.
