Turkey and roasted red pepper meatloaf

Did I mention that we love meatloaf ? Well, here is another one of our favorites, this time with ground turkey and oats. Oats? Yep…Here we go:

1 pound (about 400 gr) of ground turkey
1 yellow onion diced
2 slices of bacon diced
2 cloves of garlic diced
1/2 cup ground oats (Note: I used the gluten-free instant ones. You can use any type or bread crumbs. For oats: grind them in a blender, then add some spices such as salt and pepper, garlic, onion and paprika powder and dry thyme)
1 egg
1/2 cup grated parmesan cheese
1tbs Dijon mustard
1 tbs Worcestershire sauce
1-2 roasted red peppers from a jar, diced
1/2 chopped parsley or cilantro (what I used since I had some in the fridge)
salt & pepper

Heat the oven to 400F (about 220C). Saute bacon in a bit of olive oil until it starts getting crispy. Add onion and garlic and saute until it turns to light brown, about 3 minutes on a medium heat. Set aside.

In a large bowl, mix together turkey, egg, onion mixture, oats, mustard, Worcestershire sauce and chopped cilantro (or parsley). Add diced roasted red pepper. Mix well ( I use wet hands to make sure it all gets combined).

Line a roasting pan with some parchment paper (to avoid ugly stains) and form a loaf out of the mixture. Roast in the oven for about 50 minutes. Let cool down for about 15 minutes outside. Leftovers are usually scarce at our house but make a great next day school or work sandwich. Eat and enjoy!

  1. i just love reading your page, Maja! While I’m not a big fan of meatloaf (I like it ok, just not something I myself make very well), the salad on the plate looked scrumptious. I also loved all your photos of the lake and of Richmond. Gorgeous!!

    Will we see anything about graduation? Much congratulations to Sash, you, and Peter for making it through elementary school for the first time! A big milestone, for sure.
