Most of us love chocolate – some every day, some from time to time. What if you could prepare one at home and make it not only yummy, but super healthy, for that guilt-free evening (or mid-day) treat? This one turned out super delicious and it is a keeper. Here we go:
3/4 cup raw cocoa powder
1/2 cup maple syrup (if hard to find, or pricey try Agave nectar?)
1/2 cup coconut oil (solid)
1/4 cup nut butter (I used my favorite almond butter, but you can use other nut butters)
1 ripe banana
1 tsp vanilla
1/2 cup nuts (I used some chopped walnuts and some sliced raw almonds I toasted in a small pan and then chopped)
a pinch of sea salt
Mash up banana with a fork on a plate. In a large bowl mix cocoa, maple syrup, coconut oil, nut butter, banana and vanilla. The best is to use a mixer, but I actually used immersion blender to combine it all. It worked! Fold in half of the nut mixture. Line a loaf pan with parchment paper and pour the mix. Sprinkle with the leftover nut mixture. Put in the freezer for 30 minutes or more.
Keep in the fridge and enjoy a bite (or three) after dinner! Ours is half gone already!
