So now that summer is officially here, we are ready for some tasty and fresh salads to go with our grilled meats or fish. Plenty of wonderful berries and some water melon for desert, et voila, you have a great (and super nutritious) summer meal.
1/2 bunch kale (or other greens like baby spinach) – de-stemmed and thorn into smaller pieces
a handful of cherry tomatoes halved
1/2 red onion cut in half slices
1/2 of a bell pepper (red, green or yellow) diced
1/2 of a cucumber, skin on, cut length wise and then diced in halves horizontally
1 carrot, diced into small squares
(optional) 1/2 of a ripe avocado diced into squares
sweet&spicy (Trade Joe’s) pecans (or toasted walnuts) crumbled
coarse sea salt
juice of 1/2 of lemon
Put kale in a large bowl, pour about 2 tbs of olive oil and a generous pinch of coarse sea salt and “massage” kale with hands until it starts turning into a darker green color, aboout 1 minute. Add other ingredients, some more olive oil and lemon juice and mix well. Add some crumbled pecans on the top and enjoy! Don’t forget the fruits for desert!
