Cinnamon banana bread

When your bananas start getting brown-ish, use them to bake the best banana bread. There are many banana bread recipes out there. And we have tried many of them. Until we found this one. It has been one of our regular bakes ever since. I use a mixture of regular and whole wheat flour, brown sugar and olive oil, to make it more healthy and nutritious. Excellent for breakfast with some nut or regular butter or other spreads, on the top. Goes great with a cup of afternoon coffee or tea. Keeps well for up to 3-4 days. Here we go:

Ingredients:
(wet ones)
3 medium size ripe bananas
2 eggs
1/2 cup olive oil
1/4 cup honey
1/4 cup water
(dry ones)
1 cup flour
1/2 cup whole wheat flour
1 tsp cinnamon
1 tsp baking powder
1 tsp salt
1/2 cup brown sugar
(optional)
Add chocolate chips, toasted walnuts or almonds or dry cranberries in the mix for additional crunch, sweetness or energy.

Preparation:
Heat the oven to 350F (180C). Oil the inside of a loaf baking pan. Mix all wet ingredients until smooth. In a separate bowl, mix all dry ones until well mixed.

Add the wet ones to the dry and mix all well. Add nuts or other optional ingredients and pour into the pan. Bake for about 1 hour. Let cool down and take out of the pan. Enjoy!
