Happy August 1! How about a nice healthy spin on an old favorite for a weeknight meal? Here is a recipe for a delicious cauliflower potato salad we paired with some left over green beans and grilled chicken sausages, on a recent summer evening. If you like roasted cauliflower, you will love this. Here we go:
1 red onion diced
2-3 stalks of celery diced
3 hard-boiled eggs diced
1 medium size head of cauliflower, cut up into small pieces
1/2 cup plain greek yogurt
2 tbs mayo
2 tbs Dijon mustard
1 tsp honey
1 tbs olive oil
2 garlic cloves minced
juice of 1/2 lemon
Heat the oven to 400F (220C). Drizzle the baking dish and the cauliflower with some olive oil and s&p. Roast the cauliflower for about 25 minutes. Let cool down.
Mix all other ingredients in a large bowl.
Add the roasted cauliflower and the dressing. Put in the fridge to chill for 30 minutes. Serve and enjoy!
