If you happen to have some leftover rice in your fridge and wondering what to do with it, make some fried rice. Who doesn’t like some Chinese food! Home-cooked, even better. Here is another quick and tasty weekday dinner you can whip up in 30 minutes (if you have all the ingredients). Here we go:
2 cups leftover cold rice (I like to use brown rice)
2 small or 1 large carrot peeled and grated
1 cup frozen peas
thumb size fresh ginger, peeled and diced into small pieces
2 large garlic cloves diced
a bunch of green onion diced
1/2 pound (about 400gr) ground turkey or pork
vegetable oil (I used some olive oil)
Heat up some oil in a wok. Mix eggs in a small dish (add a splash of soy sauce to season it) and when wok is hot, pour it in and cook it as an omelette for a bit. Flip it to the other side until it is done. Take out and cut into strips on a cutting board. You will add it in the end to the rice.
Add some more oil to the wok, then add garlic, ginger and green onion (you could certainly add some fresh chilies if you like it more spicy; we kept our dish kid-friendly, so no chilies) and stir fry quickly until it starts to smell wonderfully. Add minced meat of your choice, some soy sauce and cook until the meat is done, for about 6-7 minutes. Add carrots and peas and again mix it all well. Keep the heat on high and stir often.
At the end, add the eggs and about 2 tbp of soy sauce and 2 tbs of rice vinegar. Mix it all well and enjoy!
